Gorgeous! (Excuse the ignorance please) What is the species? Looks like pork but then the grain of meat looks like a beef flank on one side of the ribs or is it belly?

I cannot identify, please educate me.

Here it is rubbed down with a light sprinkle of Smokin' Guns Hot and a heavy coat of salt, pepper, and garlic.

Yep, beef short ribs before they were trimmed and cut into shorter sections.

The meat counter at my local Asian market keeps them in large square slabs like those. You tell them how you want them sliced. They usually slice them down to about 1/4" for grilling.

Yep.

Here they are about 2 hours into the cook. The meat is pulling back nicely.
