Default Tomorrow's Q - Big, beefy chuck short ribs

Just picked up 6 lbs of shorties, my friendly custom butcher made sure that all 14 shorties were with 1/2 oz of each other. Sweet! Pictures to follow soon. Each ribs weighs approximately 0.48 lbs.

  • 3 tablespoon ground black pepper
  • 2 tablespoons kosher salt
  • 1 tablespoon sugar
  • 1 tablespoon onion powder
  • 2 teaspoons mustard powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ancho chili powder
  • 1 teaspoon chipotle

My butcher knew I was smoking, so he made sure they weighed roughly the same. The shorties I get from him are always very meaty, not cheap at $5.99/lb. but worth it.
