Default Just getting started........

I just purchased a new rig and I've had a few people ask me about catering. I've done backyard parties for 40 people or so and I always have waaaay too much food. Let me know what you think about the two scenerios below. I thought brisket was typically 1/3 lb per person but wasn't sure on sausage

60 adult guests
Brisket and Sausage that will be served with rice and beans (got the low down on the rice and beans)

100 adult guests
Brisket and Sausage " "

(got the low down on the rice and beans)??

What is the low down? Is it filling, so you won't need as much meat?
Do you have a recipe and mix them together? or serve separate

Sorry....low down meaning I know how much rice and beans I need to make to accompany the brisket and sausage. Just need looking for tips on the meat. Right now I was thinking 2 12pm briskets an 15lbs of sausage.
