Default First Ribs...and I did not screw them up. Pr0n.

First let me say that for most of my 36 years of life I have not done much in the way of cooking that involved any skill. I grew up with parents that were great cooks. After that I got married and my ex wife did 90% of the cooking. And what cooking I did was very simple. Well a divorce and circumstances changed, I married my wonderful wife. She is also a great cook. So you would think that I would not be cooking. But my wife saw that I wanted to try stuff. So she encouraged me. She got me a new gas grill. She bought me cookbooks. And then a month ago she bought me a WSM.
I started simple, "Smoked" a split chicken. (Well not really low and slow)

Next I did a Fatty and some Moinks (I wanted to test keeping the WSM in the grey zone)

I then decided to do some ribs. I took my time. I read 50-60 posts on ribs here on the site. I read some cookbooks and other websites. I did not want to screw up.

So here goes.

1. Started the WSM. Standard method with some Cherry and Hickory.



2. Got out the rubs. Wanted to try two different types.



3. Let them rest as the smoker got to temp and got ready. Then rolled them.



4. On the WSM. 3 hours at about 225. Flipped them over. Kicked it up to about 250-260. 1 1/2 hours later I tried the tear test. Having never done this before I was not sure what to "feel." Pulled them off wrapped them in foil until guests arrived (about 30 minutes) Put them out dry with some Trader Joes BBQ sauce to slather if people wanted. Pick below is just before pulling off.



They were PHARKING good.
