I've been thinking of doing marrow... looks great all around!

My brother's restaurant in Chicago has marrow on the menu... served on a sourdough toast... great combo. The smokiness added this way would be good, too.

For meat lovers, you have to try marrow. It is awesome, but very rich. When I tell people about it, most think it's gross or weird. The best way I can describe it is, it's like if there was a such a thing as beef butter.
