Used seasoned peach logs on chickens and sausage this weekend. Have to say that using peach and waiting for "sweet blue" smoke made a world of difference. Didn't realize peach wood put out such a sweet smelling smoke. Did chickens at around 250 - 270 for 1.5 hr in smoke and 1 hr wrapped in foil. Sausage went 1.5hr. Food was awesome. New stainless baffle seemed to work great. My brother brought the seasoned peanuts we have been reading about on this site and they were incredible. Have a good day.
