Default Rookie From Iowa

Hi everyone from Iowa. I am a meat locker owner in Eastern Iowa. Most of our work is custom slaughtering. Killing/cutting around 400 beef and 100 hogs a year. Got my new UDS yesterday. Tried it out this morning with a couple chuck roasts. Lets just say it didn't turn out like i had planned. Over cooked. Only cooked for 3.5 hrs around 275. Took off at 200. Let rest for an hour. I guess you can't be perfect right out of the gate. Great to be here and look forward to learning a lot in the forums.
