Didn't get started at the crack of dawn, but a bit earlier than planned, which is good - I've got 20 pounds of Pork Butt to get smoked today!
I'll pop up some fresh pron here every so often. Here they are a 7:30 when I got them on. So looking forward to some good ole pulled pork! ![]() And here's a look at 8:30 - 1 hour in. ![]()

Thanks guys!
I decided to double check the temps with my super-accurate, lightning-fast YELLOW Thermapen - I wasn't believing the probe temps. Well, they are still a bit further along than I expected, but are about 10* lower than the probes are reporting. Always a good idea to check a few locations in those big butts. Here they are after 3 hours... ![]()
