So this recipe is officially DONE. This is the EXACT recipe that I submitted this past weekend at a competition in Franklin, IN in an "anything but" category and won 2nd Place!!! I know it's my secret recipe, but I'll share it with my fellow BRETHREN!!!!
![]() My brother suggested I title them "Over the Top Beans", but I like the more descriptive title: Wampus's Peach Bourbon Baked Beans Ingredients: 2 cans (15 oz) of cooked Great Northern beans, drained and rinsed 4 slices of thick sliced bacon, chopped 1 lb maple fatty (smoked ahead of time), crumbled/diced 1 med onion, diced 1/2 bell pepper (I like orange or yellow) 1 can (21 oz) peach pie filling (run knife through can to cut up larger pieces into smaller pieces) 1/2 cup brown sugar 1/2 cup Famous Dave's Apricot Bourbon BBQ Sauce 2 TBS worschestershire sauce 1/3 cup bourbon 1 lg clove garlic, minced 2 TBS yellow mustard 1 TBS rub (I like SM Sweet & Spicy) 1 TSP Ground Cayenne Pepper (OPTIONAL) Directions: -Smoke Fatty (can be smoked well before), crumble or dice -Brown Bacon in skillet (about 1/2 way) -Add onion & pepper - cook until just carmelized -Slowly add bourbon & garlic - simmer until caramelized -Remove from heat -Add remaining ingredients to skillet, mix thoroughly -Put in pan and place in smoker -Smoke for at least 2 hours, stirring occasionally (I smoke for 4 hours) NOTE: I've had trouble finding Famous Dave's Apricot Bourbon Sauce lately. I've substituted lately with any of these:
The beans I won with this past weekend also had about 1 tsp of ground cayenne pepper in them, I've listed that as optional. If used without the cayenne, they're really not spicy beans at all, but have just a little zing to them. I don't even like baked beans and I LOVE these!!! I'm gonna submit them to the Brethren Recipe Book soon. ENJOY!!!

Could I substitute dry beans for the canned ones? maybe I should cook them first?

You could, yes. I tried that the first time I did these, but didn't soak the beans correctly and they came out very tough. This is what I ended up trying because it took a lot less time.
Personally, I'd think they'd be even better with dried beans, properly soaked.

I like the other good stuff that the peach pie filling brings to the party too, though. Really helps cut the bourbon, onion and garlic. With the brown sugar and the pie filling......MAN it's good. Nice recipe Wampus! We have a very similar recipe with the peach pie filling. My wife got a 1st place ribbon with them a couple years ago.
Try smoking the bacon as pig candy prior to cutting it up and putting it in the beans....adds a ton of flavor!

Those sound freaking incredible, Wampus! Thanks so much for posting your recipe. My wife and I have actually been talking about trying to find a really good bean recipe to go with all the BBQ I've been making, so we'll definitely give this a shot. I've already got a good hunch this may be the keeper
