Default First load of meat in my new UDS

It is dark thirty here on the west coast. Today is my wives birthday! So I am cooking up a big party I lit the UDS about half hour ago. I am going to cook two 7 lbs butts and two 10 lbs briskets. Thanks for the tips I got from all of you! I hope it goes smoothly. I have cooked a great brisket on my first UDS and hopefully today I will not be slicing the pork butt with a red face wondering will I ever get one of these pull apart tender. Today is the day!!!!

Check out the lid vent on my UDS.

The lid vent is aluminium sheet. I get scraps from my neighbor he is a welder. I am a woodworker but lots of my tools will cut aluminum. The pattern on it I cut with my ornamental lathe it is home built also.

Here are the results. My pron pics were not as good as I hoped. I was tired after all of the days activities. The meat was excellent. The brisket was particularly good very tender and juciey.

Beautiful work on the vent! Almost too purty to get grease all over.

Pork looks great, looks like it must have been a great party!
