After years of talking about it we finally did it. 2 Bruthas BBQ is open for business.
We landed our first gig. 75 people. A couple is renewing their vows. The menu is Brisket and Chicken. I've read if you have Brisket as your only meat plan for 1lb precooked weight per person. My question is, if we have 2 meats and 75 people, should I do enough of each meat for 75 people as if that meat was the only meat? I'm sure there's a happy medium. I was thinking 1/2lb precooked weight per person for brisket and one leg and thigh per person. Does that sound about right? |

I'd look at 1/3 lb of brisky per plus the chicken you listed. Last thing you want to do is start off being short.

Think about this-if you went with 1 lb of brisket per person and had some left over-would that be a bad thing?

If your trying to do this as a business and leftovers equal money out of your pocket...then I would think yes. If they leftovers are paid for and left with the customer, then probably not.

1lb of brisket per person is an awful lot and would be a losing deal.
