I have seen Kraft win sauce contests a couple of times. Needless to say, I stopped wasting my time and money entering sauce.

Well congrats on your sauce winning...
But, its amazing how often somebody cracks open a bottle of sauce from the grocery store and wins the sauce competition.

Not to "wax serious" here, but there is a lot of good "off the shelf" sauce out there. I did not say "great", just "good".
I do not know who judges sauce contests and have no idea what the "standards" are for them. Somebody can help me out here.

But, most "citizens" I meet have not a clue as to "different" or "unique" or "high quality" BBQ, let alone sauce.
They simply have never seen what can be done with a "great" sauce.
They are used to "Sonny's", "Larry's" (really Cattlemen's), or "whom-ever" and that is the "standard" to them.

I have tasted some of the custom "brews"--Mista's comes to mind.
Absolutely fantastic stuff. Different, sophisticated, and YUMMY!
But, would "Joe Public" pick up on or appreciate the quality--I doubt it!

Just my amateur thoughts!

Needles to say I had a blast and the Spicebox cooked greatÖ The next cook I can make is Lake City, April 1 & 2. I want to go to Auburndale but the 12hrs of Sebring Race is that weekend here in Sebring.

I am very sorry I did not take the time to introduce my-self to you and your wife. I was abit overwhelmed being a rookie.

I think you and your wife and other Husband wife teams like smokin permitted have a great thing going. I don't think I could ever convince my wife to spend the weekend Qing and enjoy it like I know you all do. I was happy to see Smoking Permitted do so well in ribs they have taken a lot of time to give me some good tips...

Kevin do the FBA Judges want pulled, sliced, or chunks of pork or all of the above? :?

Hey Jimmy,

Glad you came out and joined us!

Next time definately come by if you get a chance.

When we first started (October 2002) I had a few friends as part of my team, and Clara reluctantly came along also. What usually happened was everybody else had to leave before the awards, and when we got our name called, it was just Clara, and me to walk the stage. Well, I think thats the part that got her hooked. Soon after there was a couple of contests where nobody else could come and help. The first one was Okeechobee (2003), we won our first Reserve Champion, and a couple later (Lake City 2003), we won our first Grand Champion. We then figured it was best with just the 2 of us.

Now (even though she will never admit it), I think she enjoys it just as much as I do. She only started coming because I insisted I wanted her there. I am really glad I did, she keeps me organized, and the place clean. And when its all over and I can barely walk, she is the one to get things ready to load back up again. If you can get your wife involved, then do it. Its a great way to spend time together, and then she will understand your passion, and she will enjoy the people. We have met some great people, doing competition bbq.

Now on to pork... The judges like bark, so if your going to do pulled, put some bark chunks in also. It helps the box look better, and it gives the judges the bark they look forward to. I am told sliced works well also, but I have never tried it.
