If I ever enter a Chef's choices, I'm going with dessert. The only chef's choice I ever judged was the last category of the day. Most of the judges were really hankering for dessert and were disappointed when none hit the table. In a field of about 40 teams, only 2 desserts showed up at all, and everyone was wishing for more.

That being said, I gave triple nines that day to some perfectly grilled lobster and also to some kick-arse braised (?) short ribs.
