Default pastrami and balls

today i finally smoked and then steamed my piece of corn beef to try and make pastrami.
im happy with what i came up with.
i also tried smoking some bulls testicles .wasnt happy with them.
i used my UDS with some hickory chips and a piece of peach wood.

i rubbed the beef with a mix of plack pepper corriander and paprika

the balls had garlic and corriander

put it all in the smoker

while i was waiting i had some kibbe....basicly its raw meat with mint and onion

the balls finished first

later in the day i finished the pastrami smoked steamed and sliced

and made me a sandwich


the balls tasted ......like balls.ill never smoke them again, there way better fried.
the pastrami was real good though.

Shame the balls were no good... NOT!

Great looking pastrami!
I like fried "balls" but have never cooked them with the outer membrane still on.. Did you peel them after cooking?

usually i take the membrane off, but for smoking i wanted to try both with and without.
either way was no good.
fried is way better.
