I need as much advice as possible & appreciate all the help.
A new unknown venture into the BBQ world coming for me also. Friday & Saturday evenings 4-8pm. I cant afford to leave my day job my need some extra $$$ to help pay my mortgage & who knows where it might lead to. 12 x 20 tent A few tables Electric deep fryer Grills at the back of the tent Sink with running water inside the tent A few 6th tables Coolers to hold cooked meat Coolers for drinks A simple menu of Grilled Jerk style chicken without sauce Regular seasoned chicken with BBQ sauce Smoked If I could get my smoker to work & find an exporter out of the US of wood Jerk chicken Regular seasoned chicken No sauce Beef burgers home made style Cheese optional Sides French fries Fresh salad( lettuce leaf, tomato slice, few cucumber slices, shredded carrots) Maybe onion rings but I've never made that before. Condiments Ketchup BBQ sauce Mustard Garlic sauce Pepper sauce No pork because we got a mix religious society & the Muslims won't come near my spot( at least at the start I need all the customers I could get) Hindus mostly don't mind beef being cooked on the grill just won't eat it. |

I'm not sure what you're looking for here. Advice? Menu items? Lessons learned? I have no doubt you'll get what you need, you just need to be a little more clear for us.

Do a few things, do them well and then learn more. Maybe do a rotating menu n a minthly bassis...keep a basic menu then change one thing every month as a "special". Sounds like you have a hadnle on the situation. good luck. Scott

HA!
One word of advise. If you're eating cow heel and corn soup at the same time, be sure to eat all the corn soup you want FIRST. The cow heel is so gelatinous and fatty that it quickly coats your tongue and you won't be able to taste the corn soup anymore! LOL They are both great...the cow heel is great with a little pepper in there. Quintessential foods to have when in Trinidad: - Cow Heel soup & Corn soup on the savannah - Bake & Shark on Maracas - UWI Doubles (or the stand on the corner right by UWI...they have coconut chutney on theirs) - The Burger Man (!!!) late at night - Trini Chinese food (amazing) - Geera Pork (at home is good...limin at Cora is better!) - Oil Down - Roti - Goat Head/Goat Belly I have to stop there...getting raaaal hungry boi. |
