Take a breath!
Did my first overnight smoke on the wsm. I totaly loved setting it up at 8pm last night and having it be on temp at 7:30 am today. (I did wake up and check my thermometers at 4:20 am) Internal temps just hit 180 so I should be able foil this in the next hour or so.
I'm really excited to be able to serve good bbq to all of the guests at the party for my daughters college graduation. I think that some of the guests may have never tasted the real thing. I will be serving pulled pork on little buns and smoked orange-horseradish chicken salad as the main dishes.
With all of the festivities and the cooking I will likely be unable to post any pictures for a while. I am so proud of my daughter. She is graduating summa cum laude, is outstanding graduate for her school, gets to speak at the commencement, and has a bunch of other honors and special cords, hoods and medalions that she gets to wear.
It is an exciting day.:-D:-D
