Wagyu Brisket Source
I have located a source for untrimmed wagyu briskets in Greenville, TX. They will sell for $5.99 per pound. The butcher is estimating a 20 to 30% loss when trimmed.
The supplier will hand select the brisets for competition to insure a good thick flat area. If there is any interest, I will contact the market and he can get upto 20 cases (estimating 4 to a case) at this price. They are frozen. |

Snake River Farms
$5 a pound in Florida...just jumped up about .75 a pound in the last four months. This beast will be cooked in Salisbury, Md this weekend.

Picking up a case on Sunday and have been told they average 15 pounds with a good fat coverage and should only lose 10-15 percent by trimming. May have them in Lexington, NC with me.
