Default Farkin' Que Heaven...

Man, I thought I was gonna cry...

You guys remember my smoke a couple of days ago...thought the brisket was overdone. Anyway, I got a chance to use my XMas present, a vacuum sealer....and tested a couple of different ways, with extra juice, with sauce, without, etc...portioned it off and threw it in the freezer.

Well, wife's gone out of town for the week (woohoo!!) so I loaded up the XBOX and threw a frozen bag of pulled brisket with sauce and extra juices into a pot of boiling water. A little while later (got caught up in a game of NCAA football...but that's another story...) I pulled the brisket (had forgotten to warm some bread or something), cut open the bag and poured into a bowl...man, I was in HEAVEN!!!! Instant 'cue!! Think I need to go pull out another bag...easy clean up too!! I owe it all to you guys!!

Back to the football...

Foodsaver is the bomb! I'm stuffed from dinner but you flung a craving on me for that 1/2 rack of babybacks only I know about in the back of the freezer!

Works great for us. I can smoke way more than we will eat, even if I used Zip Loc bags and the freezer. Piece of cake to pull a couple of bags for dinner and just warm them up without having to fire up the smoker, or eating some Q that has been in just a little too long. I know ours has paid for itself just being able to take advantage of sales.

Definitely worth it! It's great for leftover Q and all kinds of food. Gives me an excuse to fill that 'dera all the way full & it's good to have some BBQ ready to eat when the craving hits.

Foodsaver is definately worth it!! Boil in a bag IMO is the best way to reheat Q, it doesn't dry it our and you can't screw it up. I have portioned of portions for just me...and then larger ones for when it's me and the wife...if company comes over, I just throw in a couple of bags. My wife doesn't eat a whole lot, and I am trying to scale back my portions, so know I don't ahve to feel guilty if I smoke a brisket and it's only the 2 of us.

And, since we are on the subject...anyone have tips and tricks for the vacuum sealers?? Mine is a FoodSaver and I have noticed that I have to apply alot of pressure and hold it till the pitch changes, otherwise I don't always get a good seal. Also, I have learned that if you spoon (I use a baster) some of the juices in there...and I like to put some sauce in there as well...the vacuum sealer extracting the air will cause the juices to reincorporate with the meat. The result is very juicy Q!!!

I opened another pouch of Q after posting this...couldn't resist. The second had extra juice, but no sauce. Although it was good, it was not as good as the one with extra juice and bbq sauce added before sealing.

Oh...another thought. When I did my ribs, I did them 3-2-1, except it was more like 4-2, then into the fridge (after resting) and eventually into the vacuum bags. My thoughts were to boil in bag reheat and then throw them under the broiler to finish off. Or, if I am in the position to fire up the grill..finish off that way.

Do the foodsavers come in different models? If so, which one is best? How about the one they sell at Sam's Club? Feedback please.
