Default Cold smoking tips

on Sunday I am smoking about 10 pounds of pastrami and when my nephew found out he wanted to throw in some garlic to smoke. After thinking about it I told him the best way would probably peel the garlic and put in a foil pan with holes in the bottom and then cold smoke it and after thinking about it I thought I was going to throw on some cheese to smoke while I was at it. My plan for cold smoking is to use my ProQ20 with cold water in the water pan and use a 2nd stacker to keep distance from the coals and only use 4-5 piecesof blue k at a time with Apple or Cherry chunks for the flavor. Does this sound like a workable plan and should I use apple or cherry?
