Those temp stalls can be nerve racking! It's hard to just wait them out and wonder what is going on with the cook! Great job waiting things out and getting a super looking brisket!

Yes. Thanks, we were there in February and he was talking about his brick and mortor building. I have seen pictures and it is painted just like his trailer. He is still running out of food around 1:00 or so. Good problem to have Congrats again on your brisket it looks great.

Yeah. I don't worry about it, but I was surprised because I normally get good ones. I guess the meat sitting on the counter for an hour might have killed it. :shrug:
