I have been gifted an non-electric catering cabinet.

Yes, I see it now..... Is it insulated? If so, I would give it a try if you already have it. Put a pan of HOT water in it first to "warm" it up. Then if it holds the heat, you should be ok. It looks like a food carrier type cabinet as it is, so I am going to assume that it is insulated to some point. Like I would say, if you already have it, try the water trick and see what it does.

It's really a heavy duty container. It is a food carrier cabinet. Thanks I'll give it a try. I'll put a remote thermometer in it (if I can close the door with the wire in).

I was going to suggest putting a thermometer in it, but if you know the temp of the water when you load it, let it sit for say 2 hours, then open it up and see what the water temp is. that way you want risk any heat loss where the wire comes through the door.

That looks to be a standard, "un-insulated" carrier. That is not meant to keep hot food hot or cold food cold. You can use it, but only if you keep time controls on your food. It will not stay hot in that unit.

That looks more like a bread style cabinet to me. Meant more to keep food covered than either hot or cold. Could be wrong tho.

I will test it before use. Otherwise I can definitely use it as a proofer. I hope it works out.
