Talking Pecan Smoked Split Yardbird On a Hot Drum

Found two small chicken halves in the freezer yesterday, and decided to do them in a style I haven't done in quite a while - heavily seasoned with dry rub with fresh rosemary sprigs under the thigh and breast skin.

For the rub, I used three different blends: Simply Marvelous Sweet & Spicy, seasoned pepper, and Moose Chicken Rub #2:



I added a few pecan chunks to my firebasket:



Then fired it up with my flamethrower:



When the drum got to about 300, I put the birds on:



Flipped them about 15 mins later:



Here they are just before I pulled them, at about 45 mins:



After they rested for about 15 mins, we cut them up and found an abundance of moist juicy goodness:



The chicken was superb! The rosemary under the skin added a wonderful touch and imparted a sweet savory flavor to the chicken. I will be doing this again, and on a regular basis!
