Default Awesome Lamb Chops

The other evening we picked up some lamb loin chops from Costco. These are really good sized chops and priced much better than other markets, so they're a great deal.

I marinated the chops in EVOO, sea salt, garlic, fresh rosemary, and a bit of seasoned pepper:



I then lined them up bone side towards the heat so they could cook a while indirect:



After about ten mins, I flipped them:



After another ten mins, they went to the hot side - notice the smaller chops were a little further away as I wanted all of them to cook evenly:



Finally, I finished them bone side down so the meat near the bone would also be evenly cooked:



After I pulled them, I let them rest. Despite the fact they had only been marinating for about an hour, (I usually marinate for at least 24 hours) the flavor was really impressive. They were cooked a perfect medium - medium rare:
