Default First time smoking cheese

So here is my highly sophisticated cheese smoking apparatus.

So far temps are staying down in the smoke chamber. I'm smoking cheddar and muenster with cherry wood. I bought a few other cheeses but thought I would test with 2 lbs instead of 5 just in case.

After 1hr the cheese has nice color. I think I will go 15 - 30 mins longer. So far this set up has worked great for smoking cheese.
