It has been a long time - posting or smoking - time for a change!
Wow - can it really have been a full year since I've been browsing the Brethren, making a few post - and even worse, since I've had the smoker fired up??!!?
Alas, it is sad but true... Getting busy with work and moving to a new home have taken their toll! Step 1 - Here I am on the forums again. Step 2 - I have 20 pounds of pork butt sitting in the fridge all prep'd and ready for what almost feels like a virgin smoke tomorrow. Hopefully it's like riding a bike... I'll post some pron throughout the day. It's gonna be a hot one here in So Cal. What's a guy to do but sit with his smoker and partake in a adult beverages while doing some Q. =) Questions to you Brethren - 1 - What internal temp do you pull your butts at? 2 - Do you like to foil near the end, and if so at what temp? 3 - Any favorite tips you'd like to share?? I'm usually looking for 195-200 internal, but I'm tending to put more emphasis on the "feel" when I'm putting the probe in lately. The old hot-knife-through-butter effect, you know? I'm cooking a few butts this weekend too, not sure if I'm going to foil or not this time around, because these will be the first butts on my WSM. Just gonna play it by ear. As far as tips, I do a few apple juice spritzes while I'm cooking to get a really carmelized, sweet bark. Good luck and good to have you back, even though I wasn't hear yet when you left

Been poking around other posts and getting my head in the game. The BBQ synapses are beginning to fire again. It's like coming out of a coma... I remember that my smoker leaks smoke all over... I remember that I don't foil my butts... etc, etc... Guess I'd better get to bed so I can get the fire started early.

Thanks guys. I'll be starting a new thread to post pics throughout the day.
The butts are on, the smoke is rolling and it is smelling better in this yard than it ever has! =) Just hope these bees buzzing around the bushes leave me alone! TC
