Since I have always been a fan of BBQ'd food and not smoked food, I constantly find myself cooking on my UDS, but the same problem always remains, not enough room. But it still has a better flavor than the vault. I just live the clean flavor if wood burned down to coals and food juices sizzling on them. So this idea is a direct cooking vault. A BBQ vault that I can get that great flavor that I miss. So I was thinking of getting one designed for me and my needs. Basically the same design but no reverse flow, exhaust release will be at the top instead of the sides. Delete the water pan reservoir so it's direct heat. Depending on what your cooking, you got. 5 grate levels to pick from. Essentially a really large UDS. Thoughts?
