Deer Chili from Big 10 Bash

Venison Chili

1 lb. pork sausage- cheap kind the more the grease the better.
2 lb. ground deer meat you want to brown pork sausage 1st then brown deer meat in grease
3 cups beef stock
3 15oz. tomato sauce
3 cups tomato juice If using a gallon pot you will have to add as cooks down little at time
1/2 plus 1/4 tsp crushed red pepper
1/3 of 1/2 oz. unsweetened baking choclate
3 small cans diced chili peppers
1 tsp allspice
1 tsp coriander
1/4 tsp ground cumin
2 tbsp chili powder
1 tsp ground cinnamon
1 tsp salt I use kosher salt
4 tbsp red wine vinegar
4 cloves garlic minced I use minced in jar refrigerated
3 dashes Worchestershire sauce
4 bay leaves
sprinkle cilentro 1/2 tsp??
1 tsp ginger
2 med onions diced kinda large dice
1 large yellow bell pepper diced kinda large dice
1 large green bell pepper diced kinda large dice
28 oz. red kindy beans drained and rinsed
1/4 cup sugar

Brown porksausage and keep grease in skillet.
Brown Deer meat in grease from porksausage drain well
In a 1 gallon pot mix porksausage and deer meat and 3 cups of beef stock and bring to boil.
Turn down heat to simmer and simmer 30 minutes.
Add tomato sauce
Add small cans green chilie peppers
Add crushed red pepper, baking choc., allspice, coriander, cumin, chili powder, cinnamon, salt, red wine vingar, garlic,worchestershire, bay leaves, cilentro, ginger stir well to mix
Add onions, yellow and green bell peppers stir.

Bring to boil turn down to simmer and cook for 3 hours
Add beans the last half hour
Add sugar at end of cook
makes 1 gallon

This freeszes well.

Never tried the Wild Turkey at the bash.
Didnt wanna get knocked out fast like some of the others may have.

Brought some home for the holidays though.

I tried the chili before I drank anything...........

Like I said earlier, your chili rocks.
 
I'll second what Bull said, Rogers chili was great! That and the draft beer kept things regular in the morning in the outhouse.

Looks like a great recipe. Might have to try with beef since I don't have any venison.
 
I have a few pounds of ground venison in my freezer, Im going to have to try this one.

I have never tried it with out venison so dont know what outcome would be. Also I kind of dont level off tsp.
