Today I made a rack of St Louis cut spares. I saved the trimmings and made them too. :wink: I wanted to try my hand at some ribs since the PE cooking class on May 1st. These were pretty tasty. I wouldn't call them my best rack ever, but they were up there very close. I followed Rod's instructions to a T, and this is the product.

They look good to me.... What is the PE class, and who is Rod?

Being a newbie here, I must also ask: Who is Rod, and how do we get his instructions?
 
Rod is Rod Gray from Pellet Envy. You get his instructions by taking his class. :wink: A few of the Brethren have taken the class. He used to teach with Johnny Trigg in an Old School versus New Technology style class. Now he and his wife teach the whole thing. It is worth your nickel. :thumb:

everytime i get comfortable with my dry rubbed ribs i see something as purdy as that and want to change my ways again
 
Now that is a sweet lookin rack a Ribs,, Bet I wouldn't even need my dentures for those...
