Once a year I compete at a people's choice cook off. Well tomorrow is the big day.

I will be doing 38 racks of ribs. I am set with that.
It is the chicken that I still do not have tied down.
Any suggestions for a people's choice way to do chicken?
 
I would probably cook halves or leg quarters. What are you cooking on?

This is the smoker I will have with me but they also supply a 55 gallon homemade grill if we want to use them.
 
It looks like you've got plenty of room so I'd do Plowboys leg quarters and some of those blues hog Tennessee Redwings.
