I grabbed a rack of beef back ribs as an extra for a cook I'm doing in the morning. It's been quite a while since I have cooked them. Plan on cooking around 275, what kind of time frame should I start looking for them to be done?

Also cooking a brisket, two pork butts, and three racks of pork back ribs.

At 275° you're probably looking at about 4 hours, but obviously probe tender is what you're looking for.
 
I did these last weekend on my stick burner... 250 - 280F took 4hrs

start toothpick probe at 3.5hr my ribs were solid meat/fat at 2.5 inch thick
