So it got me thinking about whacking Mine, That happens you know:tape:

Here it is, tasted great, made it softer in the mouth.
I used a cast iron plate in our Gas Weber for this cook
Served with Brined Potato and brined Sweet Potato.
Was a great meal, thanks Moose.

Look at the Skin on the spuds and sweet potato, dry and creamy flesh.

Beautiful. Absolutely beautifully managed cook. I learned to beat meat with white tail venison backstrap. Beat it-dip it twice and fry- Lantana All purpose seasoning- gravy

People who don't beat their meat, or haven't in a while- it looks stupid but offers great rewards. Seriously next time you see Beef Filet or any really good cut like the above on sale- grab your mallet or sandwich between wax paper and back over it. Excellent chicken fry- chefs choice of course. Do it till you need....


Someone will come along and say no way they could pound Filet for CFS. Ignore them. You don't need that negativity in your life.

Great looking plate, wish I could get some purple sweets.

Have to admit I was a little taken aback re: "whacking mine... made it softer in the mouth".
 
Looks like there's going to be a lot more meat beatin' around here soon!

Thanks for posting this, Titch - looks like it worked out great! Next time try it using a reverse sear to see how you like it.

Scotch Fillet here, rib Eye there I believe

Never seen sweet potato done tho, sure makes it cook good
