Your last 2 threads really make me miss bartending at the restaurant on the docks. Fresh mahi and fresh tuna were staples for me for 4 years!

Nice pictorial. Living in mid Mo we have no access to coastal water. The only Mahi Mahi I have seen is frozen in our supermarkets, I am sure they are not as good, but are these acceptable substitutes for fresh caught, or to be avoided?

Thanks. Mahi is still good if it is flash frozen right after being caught. I'd also look for ones what the pieces are individually wrap and and sealed unless you are going to cook them all right away.
