Digital Thermometer - Pic
So since I believe my built in thermo isn't working properly, here is how I rigged up my remote digital thermo... thought I'd share. All I did was removed one of the handle bolts and wrapped part of the prob in foil got it to form a seal.. took it out, inserted foil in more, then reinsterted for a nice smoke tight seal.

Looks like you got issues there. Have you calibrated your digital probe yet?

I've been under temp for about 15 hours... my last ditch effort is to throw it in the oven for the next 3/4 hours at 265 degrees and see what happens.

Theory could be right. Next time, try sticking the probe thru a potato or onion and put it on the grate so you can get a grate level temp.

Frisco,
Be careful with your probes; when they touch the hot grates they can get fried pretty easily - unfortunately, I found out the hard way. It may not happen every time but it happens enough that lots of people gave me the advice when I bought my probe.
