I took my better half Pompano (aka Golden nuggets) fishing today we caught a bunch & only kept enough for dinner...marinated in lotsa garlic, evoo, Old bay, lime zest & juice, got the grill super hot (for a Weber) skin side down w/ skewered Thai satay shrimp, grilled asparagus(evoo & s&p), & Spanish rice.....

i never knew people ate pompano...

always thought they looked tasty!
 
Wow, I love Pompano. Amazingly enough, it's hard to find at Florida restaurants when the wifey and I head down to Destin. I've asked about it, and even though you can catch them right off the shore, they all get their fish from major distributors and there isn't a big demand for Pompano.

There is a whole foods here in Atlanta that has fresh whole pompano now and then, and they will filet them right there for you. Great fish, and even better looking pics!
 
ARGH!!! you cut the head off!!! You're supposed to cook pompano with the head on! <at least that's what the old pirate florida cracker to me one time....>
