Welp seems we are catering a graduation party for 24 they want brisket and ribs. HELP me out not sure of how much to cook up. any help would be appreciated.
 
This is based on 8oz. of brisket per person and a half rack of spares (6 bones per person); you will need 20lbs. of brisket and 12 slabs of ribs and I would charge about $320 if its a drop off gig. If I had to stay I would charge more of course. Also, you may want to go with 12oz. of brisket and 8 bones per person which equates to 29lbs. of brisket and 16 slabs of ribs. The drop off price for that would be about $370. This is also based on a $2.50 base charge per person. If I think I need to make more then I adjust this amount.

Take a look at my BBQ Catering planner http://www.bbq-review.com/forum/viewtopic.php?t=10 you can download it to your computer as an Excel file (.xls) or a Zip file (.zip), if you don't have Excel you can follow the links to Open Office a free office suite and the .xls file will open in Open Office Calc.

It is customizable so that you can set most information as you like it.
