Default First smoke in progress

WSM arrived Wednesday and finally got a chance to fire her up today. Being from Eastern NC I've been wanting some down home style pulled pork for a while

Pork butt rubbed with Carolina Style Rub Some Butt

After 8 1/2 hrs it was probe tender so off to the cooler

Was going to wait longer before I took it out and pulled it but I got a little impatient because she was my first

Now the ribs are ready to go on

Didn't get any pullback on the ribs but that's probably because my temps were dropping off. Still came out tender. Could've been better but for my first time I'll take it.

Cooking looks great. How did you determine the sex of the butt?

That's a darn god looking first cook. The only issue I see is there are no fatties on that cooker!!

Never been a big sausage eater. Maybe I'll give a fatty a try next time.
