First smoke in progress
WSM arrived Wednesday and finally got a chance to fire her up today. Being from Eastern NC I've been wanting some down home style pulled pork for a while
Pork butt rubbed with Carolina Style Rub Some Butt After 8 1/2 hrs it was probe tender so off to the cooler Was going to wait longer before I took it out and pulled it but I got a little impatient because she was my first Now the ribs are ready to go on |

Didn't get any pullback on the ribs but that's probably because my temps were dropping off. Still came out tender. Could've been better but for my first time I'll take it. |
