How will I survive the weekend without JD regaling us with steak pron?

I've got a hankering for ribs, and maybe a meatloaf or two. Gotta do something.

The whole house is sick, but sometie this weekend the smoker will be going for sure. I think a Bacon Explosion is in order. I like keeping with the flow of the universe, and right now the universe is asking for the Bacon Explosion it seems!

For Sunday I will have 3-4 racks of ribs and some sausages.
Going to try out some breaded grilled chicken strips as well as some Charro Beans.
Also some stuffed jalepeno boats (with cream cheese, peppers, and turkey breakfast sausage)

I had a brisket flat ground up at Market Street, so going to try something other than store bought.
It's kind of lean, which I had to do so my wife would eat it, will see what kind of burgers we can make out of it tomorrow.

Going to be a nice day here tomorrow, so may sit outside and fire up a cigar

All you folks that are sick, get better! Been lucky around here so far.

I am throwing a 14+ pound brisket on the Weber Smokey MTN 22.5". to give it a try on Saturday night, its gonna be cold here so it should give me a good idea on how this thing works. Not gonna use one of the Guru's, going freestyle..

Smile here is what I got going on right now

Mother nature gave us a break here today, in the 50's right now, so I fired up my 1984 $4.00 weber smokey joe with my extension mod and put on a #.79/lb chicken and 2 J'Ville Brats for a snack a few mins ago. Little maple and pecan for smoke flavor.

It's a busy weekend here...
  • Four briskets (two 12 pounders and two 16 pounders) split for burnt ends & slices.
  • Four pork butts.
  • Three slabs of Baby Backs.
  • Three slabs of spares (St. Louis also doing up the tips).
  • Six fatties.
  • One small (17 pound) chuck roast.
I figure I'll cook it all up tonight, let it chill tomorrow, and then slice & cryo-suck it...

Sunday I've got 4 pounds of short ribs to go on the BGE for the game...

Gotta rack of BB and a pork loin. Also got some beef sausage made into fatties.

Using ash and some grape vines here and there.
