Or you could call it a Mexican Burrito North Ga Style. It’s definitely not the puro variety the Mexican menus speak of that is just meat without the beans or rice. The beans were cooked from dried and rice made from scratch. I thought about the order I would cook the ingredients and whether to just cook all of them together at the same time and decided to do the taters first, peppers, maters, onions 2nd, and meat last then add the veggies back first to allow the juices to deglaze the pan from the meat goodies. It worked!
