How does one do the bend test when folks coil up ribs on say a 18.5 WSM? I was made aware the bend test was the only way to tell when ribs are done.............. Maybe the "unbend test"

They are done when a toothpick slides in and out easily in the thickest part.

It is. You cant make tender ribs if you roll them.
