Spares in a 22.5 WSM
How many racks of Spares can you fit in a 22.5 WSM without a rib rack they will be trimmed St.Louis style oh and also what do the brethren do with Trimming left overs from the Spars?

I can get 8 in mine easily using both racks. I usually cook the the trimmings between the ribs.

i can do 8, but that is for sure with overlap and i need to rotate. not rolling.
4 is roomy. 6 is tight.

I have done 6, 3 on each rack, without a rack or overlapping. More than that, you need a rack or to roll/wrap.

I don't have my WSM...Yet! (ordering a 22.5" in a few weeks) But I do smoke the tips as treats. I then take the other trimmings and run those through the meat grinder to make some breakfast pork sausage.
