Default The feast of the day...

This morning I woke up and decided...I want a feast. The wife and I went to the local farmer's market and picked up a few things and came back to the house. Decided on 2 racks of ribs, sausage, and a chub of bologna. Season salt for the chub (wife's request), McCormick apple wood rub for the ribs, and nothing extra done with the sausage. Ribs took about 5.5 hours (confirmed with a 90 degree bend and tooth picks) and they were wrapped at 2.5 hours or so. The chub got up to 170, but didn't quite turn out as good as I wanted. The sausage...well, you can't really mess up store bought sausage. Ran the off-set at about 275 all afternoon. Can't wait until I get my UDS done...this thing uses a ton of fuel.
