Default Briskit Bludawg Style ... Sorta !

Been KISS on everything and getting good results... So today I thought Id Mess with it !
Usually I get packers at costco 2.59 lb for choice.
Today was at Wally World and decided to see if they had briskit ..yes They had about 5 Packers So I bought one not realizing till I got home it was Select... Thought about it and decided since it had good marble shouldnt be an Issue .

Anyway Quick trim and then what to cook it on ?
I decided to use the 26.75 Weber kettle using the Ring Method
Following Bludawgs advise .. Some course salt and black pepper on the fire at about 280*-300* 9:30 am on 6:15 off No wrap or foil during cook ..Wrapped in parchment paper for the rest and here we have it !
A Very good briskit it was !

I Only Know three Meat grades and that is Select , Chice and Prime ..Thats what I learned from the Ol Man And He always told I didnt need to know about the others !!!

Prime is the best. Then choice and select.

The other lower grades aren't seen in stores. They are commercial, utility and canner.

I have heard/read many times they don't grade brisket per se. But I don't know anything about that.

I smoked one of those Walmart Select Packers this weekend and was really surprised by the quality. Yours looks great!
