Well what do you do with 3 lbs of leftover cooked steak when my wife isn’t a big fan of red meat? Since she loves Mexican food you make steak burritos with it. Here is approximately 1 1/2 lbs diced up.

Now in the CI skillet with some frijoles in back.

I added approximately 1/2 cup of this sauce. (Good stuff)

This is what it looks like after being heated.

Now heated up a tortilla and added some frijoles, steak mixture

and cheese while still on the griddle to keep everything hot.

Now some Pico de Gallo, sour cream, lettuce and some Tapatio hot sauce.

And rolled.

Looks like a great lunch. I am such a simple person, making a big meal is out of my specialty. The other day I roasted up some pork ribeyes. By the time I finished cooking them, I decided to just eat two and not worry about sides...

If you like it a teensy bit spicier, try using Mrs. Renfroe's Ghost Pepper Salsa.

Thanks. The roasted Pasilla chile Sauce is a mild sauce with a bit of a smoky flavor. In addition to the Pasilla chiles there is also tomato paste, vinegar, soybean oil, onion and garlic powder. It says you can make Beef Barbacoa with it so if you've ever had that then you've got an idea of the taste.
