Default First Butt on the Char-Griller

HELP!

I need the basics on a char griller.... what temp to smoke it at?

What temp for the Butt to be done?

How long might it take?

Any spice ideas will also be much appreciated!!

ps: I will be using Red Oak over some charcoal in the side box for heat!

this basic rub recipe comes from Boshizzle off another thread i think they asked for a basic rib rub recipe but im sure it will work for pulled pork. good luck


1 tbsp paprika
1 1/2 tsps salt
1 tsp black pepper
1/2 tsp granulated garlic
1/2 tsp onion powder
1/2 tsp white pepper
1/2 tsp cayenne pepper
1/2 tsp ground cumin or chili powder

A: I like to cook butts at 240 minimum. They are forgiving & will not suffer at 250-270.

What temp for the Butt to be done?

A: I cook mine until they reach about 195 internal. I then let them rest wrapped in foil & old towels in a dry cooler for at least 1 hour (2-3 is even better)

How long might it take?

A: Butts sometimes have a mind of their own. On the average figure 1.5 hours per pound plus 2-3 hours rest time. At some point, the butt will stall (or plateau) & the internal temp will not rise. It might even drop slightly. This plateau may last only 30 min or it might last a few hours. Normally this occurs around the 160 degree mark. Resist the urge to jack up the heat. If you get one that is particularly stubborn, you can go ahead & foil it & let it finish cooking in foil.

Any spice ideas will also be much appreciated!!

A:There are many butt rub recipes throughout the forum. Since its your first time, you may want to consider using a store bought rub for pork.
