Spare Rib Disaster
I cooked spare ribs cut St Louis style today. I was going to try the Trigg method for the first time. I smoked at 240ish for 3 hours, foiled with a light coat of parkay, honey and turbino sugar and put back on the BGE meat side down. After 45 minutes I peaked at the progress under the foil and found this
At first I thought the Trigg method was some sort of beginners initiation joke but eventually I figured out the membrane I removed was probably the second membrane and the first membrane had been removed at the factory. I was using spares I got from Costco in a cello pack so I am surprised the top membrane had already been removed. I cooked these to impress company tomorrow, maybe I will serve them on a bun as a sandwich and pretend that is the way I planned to have them come out.

Yep, looks like you removed the second membrane. I did that on half of a rack once before I figured it out and corrected myself. I get mine at costco too, and sometimes it is hard to seperate the first membrane from the second...

I doubt Costco removed it. The membrane is very thin, if the part you removed was kinda thick you may have removed them both. Still looks like they will taste good! Nice Job!

Do yourself a favor and splurge on a couple new racks and do them tomorrow. You don't wanna feed your guests day-old-ribs anyway, right?

It isn't the cost it is the time. They are relatives so they will just have to make do with what it is the way it is.

you did not mention what you said when you unwrapped them
I am a newbie with ribs but would be inclined to agree that it was a membrane removal problem rather than overcooking at too high a heat. Just did some similar and they might have been a bit overdone for some since they broke on the bend test but they did not look like these. 3-1-45 min at a similar temp. I've done that myself. Not on purpose either! Mine we able to be be ate but they looked pretty rough. If you were to do it again what would you change? besides the membrane thing.

I quit taking off the membrane if I wrap them. They still get plenty of flavor and the membrane helps keep them together. They seem easy to over cook in foil but I'm still searching for answers. I don't see the benefit of removing the membrane. I did when I cooked them in an oven before I started smoking but not since. I sure could be wrong though ...

i had that happen one time with baby backs on my egg and i stopped foiling them at all.
i'm sure they still will taste great though.
