Thumbs up This Brisket did not stink

So, after traveling to NC, Utah and California over the past 4 weeks and trying to find some good brisket, I figured I would make one myself! Cooked around 225 for 12 hours, came out great.

First the Players:





Had a nice ring and was juicy:




Saved most of the point for brisket chili later this week:

Normally I do them hot and fast but after being away from my pit for a month, I wanted to spend some quality time... really, I knew the UDS would hold all night so I could sleep, LOL.

That looks good. I don't know if I could have saved the point for chili. I haven't tried that yet. Maybe one day I'll be able to get some of the point to last long enough to to try it, but with my family, I doubt it.

I know, kicker was, I found some of the best Mexican I ever tasted in Utah and didn't get any good PP in NC!
