Am cooking abot 20 pork loins for a Luau themed mysterydinner theater on Halloween. The pork with pineapple preserves are a slam dunk, but I don't have any Ideas for the Luau based sides and appetizers. Any one cooked a hawiian theme before?

Ahi tuna is very popular in Hawaii. I'm pretty sure you can order an Ahi tuna loin from SYSCO (if you have access) and they will overnight it to you. Not sure what your budget is. It's expensive, and would be very expensive to get retail. There are a number of different ways to prepare, but any way you did it, it would make for a very special presentation.
