I'll bet it doesn't cuz I just smoked 10 lbs yesterday as well and now it's in my main fridge on racks. Just sliced some for breakfast this morning and chased it with a glass of smoked milk! Jk about the smoked milk. Fridge does smell good though.

By the way your bacon looks great. I did 5 pounds of Madmans bacon with fenugreek and 5 pounds cure, salt and sugar. Madmans was really good this morning.

Looks great. I'll admit I had never heard of Fenugreek, and it's mentioned twice in this thread, so I had to do some research. An interesting herb/spice.

I read where it smells like maple syrup but, what kind of flavor
does it add?

Sliced all of it yesterday after a 48hour rest in the fridge. Again the kitchen smelled like bacon the entire day. Finally eating some tonight!

It doesn't just smell like maple syrup but it also gives the bacon that flavour but without the added sweetness. I've done this a few times now and I've sort of settled on 1 TBS of ground fenugreek per kg of pork belly. (I dry cure my bacon). This gives it a nicely balanced maple syrup flavour.
