Default Hmmm...what to do with leftover pulled pork...springrolls!

Took some leftover pulled. Chopped up fine. Finely diced onions, habaneros and serranos. Simmered that together. Let it cool.



Took wrappers and rolled up some springrolls.


Deepfried them until golden brown and mmmmm.

That's fun. We did the same thing on Saturday night. I made some maki rolls with leftover brisket, dill pickle & onions. For the spring rolls, I wrapped pulled pork and cole slaw. I couldn't get egg roll wrappers at my local grocery so I used spring roll wrappers. They fried up nice and crispy but didn't brown.
