Talking Chicharron and Chorizo Colombian Style...

Had some store bought smoked chicharron and a few packs of Colombian Chorizo, so we had a little late night snack!







While they were cooling off, I started the Chorizo, in the same pork fat.




My cardiologist is gonna have fit, if he knew about this. Got to live on the edge, once in a while.

It is actually sold like that, I believe it is "pork bellies", but these were smoked (not by me, but bought that way). The only thing I did was cut the slots and about a tablespoon of canola oil, in the pan, with a lid. Put the heat to med. and cover the pot, a few minutes later, and then just fry with the lid off.
You usually find them in a spanish grocery store store or "carniceria".
